PaulMcSweeneyis Professorof Food Chemistry and Vice-President for Learningand Teaching,and
former head of the School of Food and Nutritional Sciences in University College Cork, Ireland
(UCC). He graduated with a BSc in Food Science and Technology and a PhD in Food Chemistry
fromUCCandalsohasanMAinClassicsandaPost-GraduateCertificateinTeachingandLearning
inHigherEducation.TheoverallthemeofhisresearchisDairyBiochemistrywithparticularreference
tofactorsaffectingcheeseflavorandtexture,proteolysisduringcheesematurationincludingtherole
of non-starter lactic acid bacteria and smear microorganisms, the ripening of hybrid and non-
Cheddarvarieties,thespecificityofproteinasesonthecaseins,proteolysisandlipolysisincheeseduring
ripeningandcharacterizationofenzymesimportanttocheeseripening(proteinases,peptidases,amino
acidcatabolicenzymes).Heistheco-author,editor,orco-editorof15books,includingthe3rdand
4th editions of Cheese: Chemistry, Physics and Microbiology (Amsterdam, 2004, 2017), the third and
fourtheditionsofAdvancedDairyChemistry(NewYork,2003,2006,2009,2013,2015,2020,2022),
the second edition of Encyclopedia of Dairy Sciences (Amsterdam, 2011), in addition to about 250
researchpapersandreviews;hish-indexis70andhehasover23,000citations.ProfessorMcSweeney
isanexperiencedlecturerandresearcherandhastaughtgraduate-levelcoursesincheesescienceinnumerousuniversitiesandresearch
centresacrosstheworld.HewasawardedtheMarschallDaniscoInternationalDairyScienceAwardoftheAmericanDairyScienceAssoci-
ationin2004andin2009ahigherdoctorate(DSc)onpublishedworkbytheNationalUniversityofIreland.

Dr. McNamara earned a BS in Agricultural Sciences (1976) and an MS in Dairy Sciences (1978) at
UniversityofIllinois.Butthebestpartofthatexperiencewasmeetinghislove,Sue,towhomhehas
beenmarriedfor45years.FollowingaPhDasthefirstgraduateofthenewFoods&NutritionProgram
atUniversityofGA (1982),hedid apost doctoratein Dairy SciencesatUniversityofFL,and then
acceptedajobatWashingtonStateUniversity;fromwhichhehasbeenretiredfor5years.
HisearlyworkwithDaleBaumanhelpedidentifythekeycontrolsandpathwaysofmilksynthesis
whichledtothedevelopmentofrecombinantlyderivedbovinesomatotropin.Inthedoctoralworkhe
identifiedsomekeycontrolsofobesityinratandpigmodelsofhumanmetabolismandthenreturned
todairyanimalbiochemistry.HisworkatWSUhasidentifiedthekeymetabolicpathwaysthatdefine
asuccessfuladaptationandmaintenanceoflactation.Thesestudiesdeterminedtherolesofgeneticand
nutritionalcontrolofadiposemetabolism.
Inadditiontotheworkondairycattle,herealizedthetremendousinterestincompanionanimals
and that pets were not only economically important, but a key part of human development and
behavior.Thus, he started one of the first senior level Companion Animal Courses. He also started
ageneralintroductorycourseonpetnutritionandhissuccessfultext,PrinciplesofCompanionAnimalNutritionhasbeenusedacrossthe
countryandsomeothercountriesandisnowinanew(3rd)edition.
Inrecognitionofhisscientificandeducationalwork,Dr.McNamaraearnedthe1990WSUCollegeofAgricultureYoungScientistAward,
the1992ADSAYoungScientistAward,the2001WashingtonScienceTeachersAssociationHigherEducationTeacheroftheYear;the2007
CorbinAwardinCompanionAnimalBiology(Dr.CorbinwasoneofhisteachersatUIinthe70s);TheCollegeofAgricultural,Humanand
NaturalResourcesExcellenceinAdvisingAward(2005);andreceivedthefirstWSUExcellenceinAdvisingAward(2016).Hewaselectedto
theWSUPresident’sTeachingAcademyin2007.HewaselectedasaFellowofADSAin2012;earnedthe2015ZoetisAnimalPhysiology
AwardandwaselectedaFellowofASASin2016.Heisoneofonly11peoplewhoareFellowsofbothADSAandASAS.
