After all, the original tradition of beer-making boils down to using whatever beautiful, natural ingredients are grown in the ground you live on, whether they be hops, barley, fruits, teas, or spices. For a time, international industrial brewing conglomerates threatened this diversity with a surge of bland, lifeless beers—and scarily, they were nearly successful, until a worldwide band of trailblazing, inventive craft brewers brought the color, vibrancy, and diversity back into the modern brewing landscape. This book is the story of those intrepid brewers. The “locavore” concepT, the dedication to only using locally grown products, was not invented by some tattoo-covered hipster in Brooklyn, New York, ten years ago. It was invented by our brewer ancestors at the dawn of civilization some ten thousand years ago. I caught up with our author Tim Hampson over a pint of cask ale at a packed pub in London, England, recently.
