Rice can be used as the main ingredient or as a major compliment to stretch the meal. Most recipes use white and brown rice. I do use Arborio, jasmine or basmati rice but I have kept the majority of the recipes to rices most people have in the pantry.
My family likes to eat potatoes everyday. They would eat them at every meal if I fixed them. Potatoes are so easy to use and unlimited recipes can be made from potatoes. Potatoes are filling enough for a meal by themselves but adding additional ingredients makes the lowly potato great.
The recipes do not include gourmet or expensive ingredients. They use everyday groceries found in most homes. The international dishes may include a few specialty items. Included are recipes to make from scratch and also recipes that can be made from rice and potato convenience products.
Most of the recipes call for pounds of potatoes. It is hard to measure exactly how many potatoes are in a pound since they come in so many shapes and sizes. I use a kitchen scale to measure the potatoes. Use 3 medium potatoes, 8 new potatoes or 3 1/2 cups chopped potatoes as a guideline for 1 lb. potatoes. Most of the recipes are very forgiving and an extra few ounces of potatoes will make no difference.
