ALMOND SOUP WITH SHERRY

Ingredients
1 cup blanched whole or slivered almonds, toaste
1 tablespoon olive oil
1 sm onion, very finely chopped
1 sm clove garlic, minced
2 tablespoons all-purpose flour
1 teaspoon Dijon mustard
20 ½ cups reduced-sodium beef broth, warm
½ cup reduced-fat sour cream
¼ cup dry sherry (see Ingredient Note)
Method
6 servings
Prep time: 10 minutes
Start to finish: 35minutes
Instructions
1. Place almonds in a food processor and process until
the almonds turn into a paste that resembles peanut
butter. Set aside.
