This book has been made possible through the support of Costco’s many food suppliers. As in past years, we’ve asked our suppliers to develop recipes that showcase products of theirs that we sell at Costco. A new twist this year is the “In the Kitchen With” pages, which give suppliers a way to share some of their personal favorite recipes and also speak to the quality and versatility of their products. Returning in this edition is our special “Chef’s Choice” section in the middle of the book. It features recipes from many of our favorite celebrity chefs, such as Melissa d’Arabian, Tom Douglas, Ree Drummond and Marcus Samuelsson. These top chefs have worked their magic to develop recipes using their favor- ite ingredients from Costco. If you are watching your calories, not just your budget, many recipes are accompanied by nutritional information. And if you occasionally also have an eye on the clock, look for the “Quick & Easy” logo to find fast and delicious recipes that require minimal effort when your schedule is a little tight. The secret of all the great dishes, old and new, featured in this book is top- quality ingredients. When you purchase your ingredients from Costco, you know you are getting the best—and at a great price. We hope you enjoy Simply Delicious The Costco Way and that you try out our recipes with your family and friends. You can also find our past years’ cookbooks online at Costco.com. Just type “Costco cookbooks” in the search window on our home page. Bon appétit from all of us at Costco. Ginnie Roeglin Senior Vice President, E-commerce and Publishing 6 Simply Delicious The Costco Way p006.007_Ginnie_TimJeff_R1.indd 6 8/10/12 1:10 PM Foreword As we head into the second decade of our The Costco Way cookbook series, it’s a great time to reaffirm Costco’s buying philosophy. We strive to offer the highest quality at the lowest possible price, providing our members with unparalleled value. We work with suppliers who are just as passionate about the items they provide to Costco members as we are. That collaboration between buyers and suppliers is a significant part of the value equation. Regardless of trends or fashionable ingredients, our job at Costco is to continually improve the products our members purchase and better define the attributes of quality for each item. From premium trim specifications to higher grades and superior freshness to larger sizes, Costco buyers know what it takes to deliver a first-rate product. Tim Rose And we’ve seen time and time again that you, our members, are able to identify quality and value. One of our greatest joys—and proof of your savvy shopping skills—is overhearing a member relate his or her positive experiences with a product to another member. Most members seem more than happy to help their fellow shoppers by talking to them about their favorite items, based on taste, quality and price. This doesn’t occur just in the warehouse either. At nearly any gathering or social event, someone will be singing the praises of a recent culinary success made possible with the help of Costco. The recipes in this cookbook are meant to give you the opportunity to create your own kitchen masterpieces. All of the recipes have been kitchen tested, giving you greater confidence and peace of mind when deciding what to cook. Whether you’re entertaining guests or cooking for family, we are sure you will find that these recipes taste as good as they look. Jeff Lyons And whether it’s your favorite ingredient prepared in a new way or a dish featuring something you’ve never considered trying before, we hope Simply Delicious The Costco Way will become the go-to source for your new favorite, show-stopping recipes. As with our earlier books, Simply Delicious The Costco Way will be handed out to members on a first-come, first-served basis the weekend after Thanksgiving as a token of our appreciation for their membership. And as with Costco itself, the format of the book remains simple and direct. The book is arranged with sections for breakfasts, appetizers and beverages, salads and soups, side dishes, entrées and desserts. The index at the back of the book contains listings by recipe and food item. We also have included a “Supplier Listing” section with contact information for all of the participating food suppliers. Every recipe has been identified with the supplier’s name and logo. We want to thank each of these suppliers for their support of this book. (Please note that some branded products may not be sold in your part of the country. In such cases, you should substitute a similar product.) Again this year, some of the recipes have nutritional information listed with them. This is helpful for anybody watching calories and following a controlled, healthful diet. Our popular “Chef’s Choice” chapter offers 37 pages of recipes developed by some of the country’s most accomplished chefs. All of these chefs have achieved national or international renown with cookbooks of their own, television shows and/or exceptional restaurants. Thanks to all of them for helping to make this another exciting addition to The Costco Way cookbook series. Please enjoy this year’s recipes, aimed as always at making your home- cooked meals simply delicious. David W. Fuller Publisher Note on brands Many of the recipes in this book were submitted by companies that hold copyrights on the recipes and/or trademark applications/registrations on the brands listed in the recipes.
