However, because of the inconvenience of extracting the arils (for eating), it had not been very popular. Since 2000, many scientific researches conducted about the health benefits of pomegranates have verified the traditionally known benefits. According to the scientific studies, pomegranate fruit, peel, leaves, flowers and roots contain bioactive phytochemicals that are antimicrobial, reduce blood pressure and act against serious diseases such as diabetes and cancer. The findings of these studies have increased the public awareness of pomegranate and consumption of pomegranate fruit has increased substantially. Today, pomegranate plant is produced worldwide in sub-tropical and tropical areas and pomegranate fruits are marketed in all over the world. The main problems of pomegranate sector are the difficulties in production and storage during marketing. The book presents up-to- date scientific and theoretical information about production, storage and processing, marketing and therapeutic applications of pomegranates. It presents simple and practical processing and storage techniques for the extending of storage and shelf life of freshly squeezed natural pomegranate juice and retaining its nutritional quality. With the increasing demand for pomegranates and increasing emphasis on healthy eating, this book is crucial to ensuring sustainability for pomegranate production and food safety.
