The foods of Madagascar reflect the diversity of the country. Colonial France influenced them, as did the people who came from the regions of Malaysia and Indonesia. So did the Middle East, Eastern Asia and some countries in East Africa, through trading and migration.
Madagascar has many rice fields, along with minimal spices like pepper and vanilla. Tubers and roots like potatoes are used in many dinner dishes. They also have copious vegetables and fruits and a lengthy coastline offering many types of seafood.
