Their collective work was the cornerstone for this dictionary and without their contribution this project could have never been completed. To them we extend our gratitude and appreciation. On the publisher side, we wish to express our deepest appreciation to Ms. Sally North who guided and coached us throughout this project and had confidence in our ability to bring it to fruition. Last, but not the least, many thanks and appreciation to our families for their patience and understanding during the many months that we worked on this project. Abraham Pizam Judy Holcomb Editors This page intentionally left blank INTRODUCTION Introduction ix This dictionary is a landmark book in several ways. First, it is the first ever published extended dictionary that is entirely devoted to the domain of hospitality management. Second, it is a comprehensive work that is comprised of entries relevant to the major sectors of the hospitality industry including lodging, foodservice, events, clubs, and timeshare. Third, its entries reflect all the main managerial disciplines prevalent in the hospitality industry namely accounting, facilities management, finance, human resources, information technology, marketing, and strategic management. Fourth, the entries reflect the global and cross-cultural nature of the hospitality industry and were written in a way that makes them relevant to most countries around the world. The dictionary is an abridged version of the International Encyclopedia of Hospitality Management. As such, each of the Encyclopedia entries that were composed by 216 authors whose names are listed at the end of this book was revised and condensed by the current editors to an average of 150 words. The end result is a single volume that is composed of 734 entries containing over 110,000 words. Like the Encyclopedia of Hospitality Management this extended dictionary is by no means an all-encompassing reference book that covers every single aspect of hospitality management as practiced in every country around the world. It is however a serious attempt to define and shortly describe the major issues relevant to the international and multi-sectoral hospitality industry. The easiest and most convenient method of using this dictionary is by either searching through the alphabetically arranged list of entries that appears at the beginning of the book or by searching the index that appears at the end of the volume. It is our sincere wish and hope that this dictionary like its predecessor the Encyclopedia of Hospitality Management will become an important and essential tool in the scientific development and professionalization of the field of hospitality management.
