FOREWORD Dairy processing industry is one of the most important segments of Indian processed food industry. Dairying is playing a significant role in ensuring the livelihood security for millions on dairy farmers, besides being providing certain vital nutrients to consumers. “Operation flood” often referred a saga of success story of small holders who joined hands that enable country to become top most producer globally. Various processing technologies have played an important role in easier availability of milk and milk products by enhancing their shelf-life. Recently launched National Dairy Plan (NDP) aims at meeting the projected demand of about 180 million tonnes of milk by 2021-22 and envisages the present share of the organised sector in milk processing from 30 per cent to about 65 per cent by 2021-22. It will require adoption of modern and novel processing technologies. Last few years witnessed major advances in the area of processing, preservation, packaging and quality assurance of food products. Consumer aspiration for dairy products endowed with health promoting components has directed the R & D activities towards novel product formulations and development of technological packages for delivering “wholesome” foods at affordable cost. National Dairy Research Institute has given a lot of impetus on developing newer processing technologies through interdisciplinary scientific investigations for fulfilling the diverse needs of dairy industry and consumers. Several research projects are in progress in this direction. The R&D efforts in these areas will help the Indian food industry to offer safe and nutritious products to consumers and also diversify their product profile to sustain in this competitive world. National Training programme on “Innovations in Processing and Packaging of Milk and Milk Products” under the agies of Centre of Advanced Faculty Training (CAFT) in Dairy Processing is an attempt to provide update information to trainees. The participants attending the training programme of 21 days would have an excellent opportunity for close interaction with the faculty of the CAFT which will assist them in developing meaningful linkages. I am hopeful that the training will be useful for the participants in further developing their concepts of innovative processing and packaging technologies. I am hopeful that the information compiled by the faculty of the course based on intensive literature survey and their own rich experience will be of great benefit to the participants in their teaching and research endeavours.
