During the last half-century, global aquaculture (excluding plants) production has seen a steady increase from less than a million tonnes in 1950 to approximately 50 million tonnes in 2005 (FAO 2007). In 2005 aquaculture contributed to approximately 45% of the world's total fish production. The quantity of fish landed from capture fisheries has remained stable at around 80 million tonnes since 1988 and many stocks are over-exploited, hence a further increase in global fisheries is not consistent with sustainable development. Consequently, alternative, sustainable resources are required to support the future growth in aquaculture. This gives rise to novel challenges both in terms offish health and quality, and food safety, and topics in this book provide state-of-the-art contributions in these and related fields. Topics covered include a food-chain perspective from chemical contaminants in farmed fish and carry over and potential impact on human health. Methods of improving fish health, quality and safety, as well as managing such issues, are also covered by chapters presented here. I wish to thank all of the authors that contributed to this book.
