Eggs-Quisite Dishes Delicious Egg Recipes for The Whole Family! BY - Zoe Moore Copyright 2022 by Zoe Moore Copyright Notes I’ve spent a lifetime in the kitchen, and all the knowledge I’ve accumulated from that hasn’t come without its fair share of burns and disasters. Fortunately, I’m a lot wiser from it all and am now in a place where I can share my knowledge and skills with you. However, that doesn’t mean anyone can use my content for any purpose they please. This book has been copyrighted as a way to protect my story, knowledge, and recipes, so I can continue sharing them with others into the future. Please help protect my life’s work and all the burns and melted spatulas I have accumulated in order to publish this book. Gift for Buying My Book! I wasn’t always a trained chef. Before I went to culinary school, my skills in the kitchen were pretty unreliable, and my Sweet 16 birthday cake was the epitome of my amateur baking career at my uncle’s bakery. Since I insisted on baking it without any help, you can imagine what it turned out like… I eye-balled all the measurements, made up amounts for things like baking powder and salt, and even decided to throw more butter in just because I thought it would make it better. Unfortunately, my unlimited passion wasn’t very fruitful in the end. It was delicious, though, in its way. Regardless of the kind of home cook you are, I’m sure the free ebooks I will send out will excite you equally! They’re full of recipes that have been developed and tested by pro cooks so that you never end up with less than perfect versions of delicious treats like my birthday cake. All you need to do is subscribe to my mailing list to get the ebooks sent to you right away, and you can start cooking. XXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXX Scramble Egg Recipes XXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXX (1) Summer Succotash Scramble A recipe inspired by southern summer succotash with the delicious addition of eggs! Prep Time: 10 minutes Cook Time: 15-20 minutes Yield: 1-2 servings List of Ingredients: 2-3 eggs, beaten 1 tbsp. of ghee, butter, or oil (I prefer olive oil) ¼ cup of fresh corn 4-6 cherry tomatoes, chopped ¼ cup of lima beans *prepared* (pre-cooked beans) ¼ summer squash, chopped Salt and pepper XXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXX How to Cook: *Whisk eggs in a bowl with salt and pepper ahead of time if desired. Heat oil in a sauté pan over medium heat. While oil is heating, prep the vegetables. (Chop the squash, remove corn from the cob, chop or slice the tomatoes.) Add squash to the pan when it is hot. Turn the squash over when it begins to brown on the bottom side. After turning over the squash, toss in the corn and lima beans. Once corn and lima beans are heated (about 5 minutes), add the tomatoes and push the vegetables to the sides of the pan. Pour or crack the eggs into the pan and scramble in the center. Once eggs begin to firm, stir in the vegetables. When eggs are done, remove them from heat. Then, serve. *Optional: Top with Salsa, Guacamole, or avocado. (2) Kitchen Sink If you’ve ever heard of the phrase “Everything but the Kitchen Sink,” then you know what this scramble’s gonna be about! Open your refrigerator and take a look inside, then add it to your eggs! Easy, right? Prep Time: 10 minutes Cook Time: 15-20 minutes Yield: 1-2 servings List of Ingredients: 2-3 eggs, beaten 1 tbsp. of ghee, butter, or oil (I prefer olive oil) ½ cup of shredded cheese ½ cup of chopped vegetables ¼ cup of bacon, Canadian Bacon, sausage, etc. Salt and pepper XXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXX How to Cook: *Whisk eggs in a bowl with salt and pepper ahead of time if desired. **If using raw sausage, cook the sausage first. ***If you are using potatoes, cook those ahead of time if you want browned potatoes. First, heat oil in a sauté pan over medium heat. Prepare vegetables. (chop onions, carrots, potatoes, etc.) Once the oil is heated, add the vegetables. Sauté the vegetables for about 5 minutes. Next, add in the meat (or meats). Cook until warmed. Push vegetables and meat to the edges. Pour or crack eggs into the pan and scramble them in the center. When eggs begin to firm, mix in the meats and vegetables. Then, cook for another few minutes until eggs are at your preferred texture. Remove from heat and mix in cheese. Serve on plates or in bowls. (3) Chorizo and Egg Breakfast Burrito/Taco This recipe is for those who enjoy a bit of Mexican-inspired eggs. The dish is typical in Mexican restaurants that serve breakfast. Chorizo is a delicious sausage from Mexico. The more authentic your chorizo, the better. Additions to the recipe include salsa, guacamole, avocado, sliced tomatoes, beans and rice, and anything else you enjoy with a taco or burrito. Prep Time: 10 minutes Cook Time: 15-20 minutes Yield: 1-2 servings List of Ingredients: 2-3 eggs, beaten 1 tbsp. of ghee, butter, or oil (I prefer olive oil) ¼ cup of Mexican chorizo ¼ cup of Mexican blend cheese (if desired) Tortillas Salt and pepper XXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXX How to Cook: *Whisk eggs in a bowl with salt and pepper if desired* Heat ghee, butter, or oil in a skillet. Cook the chorizo. Add in the eggs. (Scramble the eggs in the pan if you did not whisk them ahead of time.) Mix the eggs and chorizo together. Warm tortillas in the microwave or over a burner on the stovetop. (If using the burner, make sure to use a heat proof spatula to turn the tortillas.) Put together tacos on a plate with chorizo, eggs, and cheese. *If making a burrito use 1 large flour tortilla and roll it. *Add guacamole, avocado, chopped onion, cilantro, salsa, and/or tomatoes as desired.
