Cook the salt, ginger, Serrano peppers, brown sugar, water, soy sauce, and apple cider vinegar in a small saucepan over medium high heat. Bring the mixture to a gentle boil and frequently stir. Continue to cook and stir until the mixture reduces by 1/3. That’s for about 20 minutes. The thickness and syrupy consistency of the sauce means the intensity of the flavors. Partition the sauce and reserve 1 ¼ cups for serving. 2. Preheat oven to 350 degrees Fahrenheit or 175 degrees Celsius. 3. Rinse the wings properly and pat dry. Pour a cup of crushed crackers in a bowl for breading. Dredge chicken wing in the beaten egg and let the excess drip. After that, coat the wing with RITZ cracker crumbs. Then, put the wings on a baking sheet that’s lined with foil. Repeat this process to all the chicken wings. Add more crushed crackers if needed. 4. In a 2.5 quart saucepan, heat cooking oil to 375 degrees Fahrenheit. Fry 3 to 4 chicken wings at a time for 1 to 2 minutes until crispy. After frying, drain wings on paper towels. Do the frying process for the rest of the chicken wings. 5. Prepare 2 foil lined baking sheets. Lightly spray with cooking spray. With ¾ cups sauce, coat the chicken wings. Layer on the prepared baking sheets. Try not to crowd the chicken wings on the baking sheets. 6. Bake for 15 to 20 minutes or until cooked through. You can check using an instant read thermometer near the bone should read 165 degrees Fahrenheit or 74 degrees Celsius. Let the chicken rest for about 10 minutes.
