I WAS BORN UNDER A SOUP SIGN. I have a very soft spot in my heart for it: I order it at almost every restaurant, I buy two cups for lunch in our cafeteria, I make a mug nearly every afternoon as a snack, and I’ve been known to put down an entire pot myself for dinner. But instead of being excited about all the options in this issue, I was frankly overwhelmed. There were just too many possibilities, a galaxy of never-ending options. Before I entered the culinary media world, I spent nearly a decade as an editor at a teen magazine, and part of my job there was to oversee the horoscopes. (A qualified astrologer would read the star charts; I would help organize their thoughts.) I was a skeptic about it all at first, but after a few years, I started to see that even if the stars didn’t have all the answers, they could help point you in the right direction. Which is how we landed here. In true Sagittarius style, I needed help deciphering what in the world I was going to make in this packed magazine, and I thought it would be fun to use astrology as a guide. Yes, there’s a perfect recipe for your zodiac sign, and you should have fun debating whether we’ve nailed your personality. But no, you shouldn’t feel bound by the recommendation. Because there’s a Joanna Saltz EDITORIAL DIRECTOR universe of soup options just beyond this page, and it’s your job to explore the entire thing. H. With just a few pantry items and your own imagination, you can create a totally custom concoction—no recipe required. BUILD A BASE Broth is the foundation that can make or break a good soup. You can doctor store-bought 1 stock or plain old water by adding aromatic vegetables like onions or ginger, spices, and umami-rich pantry ingredients. ADD A STARCH Throw in some rice, potatoes, noodles, or whole grains to make your soup extra 2 hearty. Add the uncooked starch right in the pot to thicken up your broth or cook separately if you want it thin and clear. PROTEIN Adding protein will not only make your soup more filling but also bring lots of flavor. We like 3 to use canned beans, browned sausage, and we’ll even throw in a whole chicken—the bones will boost your broth. LEAN VEGGIES Vegetables are a great way to add variety to your custom soup. Go with familiar flavors: 4 If your broth is veering in an Italian direction, for example, toss in some broccoli rabe. Or just chop up whatever favorites are in season! TOP IT OFF The easiest way to upgrade any soup is by loading it with lots of toppings. 5 The best garnishes add some sort of brightness or texture: fresh herbs, crunchy tortilla strips, or a dollop of yogurt.
