Aside from the fact that they are very easy to prepare they make a nice breakfast, brunch, or lunch treat for the whole family. This recipe book covers everything from the most basic recipes to something extra special that you can serve your family and friends to be enjoyed anytime of the week. I have included here a wide selection of pancake recipes to choose from. Savoury and Sweet pancakes? No worries, I got you covered! A nice blend of flavors from different kinds of ingredients. To make it simpler for you I have used the common household measurements, the basic ingredients that you can find in your local grocery or health store, and easy to follow instructions. If you have kids, this is the perfect way to spend some time with them in the kitchen during weekend mornings. They will love it for sure and appreciate that they made them using their own little hands. I am aware that some people may find making pancakes a very difficult task. They could be either tough or crumbly or can easily fall apart. So for you to prevent this from happening and let you achieve that perfect one, on the next chapter I have provided some tips to guide you in making your very own delicious pancakes. Have fun in preparing them; remember that in cooking being passionate about it is the key to serving delicious meals to your loved ones. Happy eating! Chapter II - Do’s and Don’ts of Making Perfect Pancakes: Since pancake is still considered a cake, then you must follow the correct measurements and ingredients that goes with each recipe. When mixing the batter (dry and liquid ingredients mixture), use a large wooden spoon or large wire whisk to easily blend all the ingredients. Do not over mix the batter! This will result to tough or chewy pancakes because the starch will develop more gluten in the process. Simply mix the ingredients until all ingredients are just blended. It will help prevent lumps if you sift all dry ingredients before mixing it with the wet ingredients. Using a griddle or heavy bottomed non-stick frying pan will save you the trouble of getting your pancakes to burn easily and stick on the bottom of the pan. Look for bubbles! When bubbles form on the pancake surface once you put them on the hot griddle or pan, then that is your clue that they are ready to flip or you can turn it over. Do not press! When cooking pancakes, let them raise so you will have your desired fluffy pancakes. Pressing the pancake will make them flat and undesirable to eat. Do not overcook! Remove the pancakes from heat once it is golden brown and cooked through. Prolonging the cooking time will also make them tough. Usually 2 minutes on each side is all you need to cook them. You can replace butter with vegetable oil or applesauce for variation. Spraying the griddle or pan lightly with cooking oil spray will also help prevent the pancake from sticking on the bottom of the pan. Pancakes are best served fresh from the griddle or while it is still warm. This will help melt the butter should you decide to add them on top and spread before taking that first bite. Chapter III – Pancake Recipes Almond Pancakes with Berries This delightful pancake recipe is so easy to make and only needs a few basic ingredients. Preparation Time: 10 minutes Total Time: 35 minutes Yield: 4 servings Ingredients 2 cups self-raising flour, sifted ¼ cup almond flour 2 Tbsp. raw sugar 1 ½ cups almond milk 1 medium egg, lightly beaten 1 Tbsp. butter, melted 2 cups mixed berries Cooking oil spray Method 1. Combine the self-raising flour, almond flour and raw sugar in a large bowl. Make a well in the center. Add the almond milk, egg, and butter. Using a wooden spoon, stir until just combined (do not over mix). 2. Fold gently half mixed berries into the batter. Lightly spray a medium sized non-stick frying pan with oil spray. Place over medium heat. 3. Pour 1/4 cup of pancake mixture into the pan and swirl to form round cakes. Cook pancake for 2 minutes or until small bubbles start to appear on the surface. Flip to cook the other side for 1 to 2 minutes or until golden and cooked through. Transfer to a plate and cover to keep warm. Repeat with remaining mixture, spraying pan with oil if necessary. 4. Divide pancakes onto 4 individual plates. Garnish with remaining mixed berries. 5. Serve and enjoy. ♦♦♦♦♦♦♦♦♦ Almond Pancakes with Orange Maple Syrup Recipe Got some almond meal, orange and maple syrup in your pantry? Well, this is the perfect breakfast recipe for you! Preparation Time: 10 minutes Total Time: 35 minutes Yield: 4 servings Ingredients 1 medium orange ¼ cup maple syrup 2 cups self-raising flour, sifted ¼ cup almond meal 2 Tbsp. raw sugar 1 ½ cup almond milk 1 medium egg, lightly beaten 1 Tbsp. butter, melted cooking oil spray Method 1. Cut orange in half and using a citrus juice extractor, squeeze out the juice. Place the juice in a small saucepan, bring to the boil until reduced by half. Add the maple syrup and cook further until thick or to your desired consistency. Set aside. 2. Combine the self-raising flour, almond meal and raw sugar in a large bowl. Make a well in the center. Add the almond milk, egg, and butter. Using a wooden spoon, stir until just combined (do not over mix). 3. Lightly spray a medium sized non-stick frying pan with oil spray. Place over medium heat. 4. Pour ¼ cup of pancake mixture into the pan and swirl to form round cakes. Cook pancake for 2 minutes or until small bubbles start to appear on the surface. Turn to cook the other side for 1 to 2 minutes or until golden and cooked through. Transfer to a plate and cover to keep warm. Repeat with remaining batter, spraying pan with oil if necessary. 5.
