Alkaline Diet Zucchini Casserole INGREDIENTS: 2 or 3 zucchini, thinly sliced 2 large tomatoes, sliced 1 large sweet onion, sliced 2 cups shredded sharp Cheddar cheese 1 cup croutons (any flavor) INSTRUCTIONS: •Take a 9 inch baking tray and spray it. Pre-heat the oven to 375 degrees Fahrenheit. •Layer the zucchini, tomato and onion in the tray and sprinkle it with salt and pepper. •Repeat the layering. •Top it with a layer of cheese and croutons. •Cover the baking tray with a foil and place in oven for around 40 minutes. •Remove the foil and place in the oven to brown the top a little. •The casserole is ready to be relished.
