Meatloaf Mexicana, page 61 Fun & Filling Santa Fe Sandwiches 6 hoagie buns, split 1/2 c. mayonnaise 1/2 c. sour cream 1/2 t. chili powder 1/2 t. ground cumin 1/4 t. salt 6 tomatoes, sliced 8-oz. pkg. deli sliced turkey 1/2 c. sliced black olives 1/3 c. green onions, sliced 3 avocados, pitted, peeled and sliced 8-oz. pkg. shredded Cheddar cheese 7 Garnish: shredded lettuce and salsa Arrange hoagie buns open-faced on an ungreased baking sheet; set aside. In a bowl, mix together mayonnaise, sour cream and seasonings; spread over each bun. Equally layer remaining ingredients except garnish in the order listed; bake at 350 degrees for 15 minutes. Garnish with lettuce and salsa. Makes 12 servings. Just before serving, add Dressing to salad and toss. Makes 6 to 8 servings. Dressing: 1 c. mayonnaise 2 T. vinegar 1/4 c. milk 1/4 c. sugar 1/4 c. brown sugar, packed Whisk together all ingredients until combined. Cover and cook on low setting for 8 to 10 hours. Discard onions and garlic. Remove beef to a bowl and shred; spoon onto buns. Serve with beef juices from slow 9 cooker for dipping. Serves 18 to 20.
